Olives in salt

This year we got so many big olives from Riverdell Spiritual Centre that we could experiment with ways to preserve them.

We tried plain water, brine and dry salt and apple cider vinegar. Of all these, I found that I prefer those done in dry salt, their taste just appeals to me.

The salt also takes on the taste of olives for possible later use.
